These thick-bodied, powerful fish are ambush predators that live around reefs, wrecks, and rocky bottom structure in the Gulf of Mexico and South Atlantic. They use their enormous mouths to inhale prey in a single gulp.
Grouper fishing is fundamentally a battle against structure. When hooked, a grouper's first instinct is to dive back into its hole or under a ledge, where it wedges itself and becomes nearly impossible to extract. Anglers need heavy tackle, strong line, and an aggressive hook-set to turn the fish's head before it reaches cover. The saying 'you have to stop them or lose them' perfectly describes grouper fishing.
The Gulf of Mexico, particularly off the coast of Florida from Crystal River to the Keys, offers some of the best grouper fishing in the world. Gag grouper are the most common target in the eastern Gulf, while red grouper dominate the deeper nearshore reefs. Goliath grouper, which can exceed 800 pounds, are strictly catch-and-release but provide an unforgettable experience. Grouper have firm, white, mild-flavored flesh that is considered among the best eating fish in saltwater.
